Papa Nash’s started with a simple idea: put two food traditions that already share a spice cupboard on one menu. East Indian curries and tikka marinades sit beside Afghani and Middle Eastern kebabs, so an Airdrie table can share butter chicken and a plate of charred skewers at the same time.
