The kebab roll is what a lot of Indian and Middle Eastern kitchens do best and rarely get credit for. Ours starts with chicken tikka — marinated chicken cooked over charcoal so the edges char slightly and the smoke works its way through the meat. That is the flavour you cannot get from a pan or an oven.
The grilled kebab is then rolled in our kabuli bread, which is soft enough to fold but sturdy enough to hold everything in place on the drive home. At $11 it is one of the better value lunches in Airdrie, and it is ready quickly when you order ahead online.
